Last Christmas, Sarah Ní Shúilleabháin told her husband Seán Bourke about her New Year’s resolution. After years of dreaming about opening their own artisan butcher shop, and even devising sausage recipes, Sarah was determined that 2014 would be the year the two foodies finally took the plunge.
The couple already had jobs, with Sarah working as a medical scientist for the Health Service Executive and Seán as a butcher in a store in Nenagh, the Co Tipperary town where they lived. But they weren’t content to work for other people when they could set up a business of their own.”I told Seán I wanted to be up to our eyeballs in turkeys in 12 months’ time,” she says. “He said ‘yes, and pigs will fly’.”
